Abstract

A pigment extract rich in anthocyanins and phenolics was obtained from sweet cherry pomace and its scavenging capacities towards superoxide anion radicals,hydroxyl radicals,DPPH· radicals,and nitroso in various in vitro system,were investigated.The sweet cherry pomace extract(SCPE) was demonstrated to exhibit strong scavenging capacities towards superoxide anion radicals generated by photoreduction of riboflavin,hydroxyl radicals generated by Fenton reaction,DPPH· radicals,and nitroso.Furthermore,the antioxidant activity was correlated with the concentration of the SCPE,showing a strong dose-dependent pattern.In the test concentration range from 0.01~5.0mg/mL,the maximum scavenging percentages to the free radicals and nitrite in above reactive systems reached to 99.83%,69.26%,95.88%,96.45% respectively.The results suggested that SCPE may be also a good natural scavenger to free radicals and nitroso.
