Abstract

In this study,the antioxidant activity of proteins from jellyfish,Cyanea nozakii Kishinouye,was determined by various antioxidant assays,including hydroxyl radical-scavenging,superoxide anion radical-scavenging,reducing power and metal chelating activity.The proteins showed a strong scavenging activity on hydroxyl radical and the scavenging effect was 85% at the concentration of 41 μg/mL.However,the proteins had a low scavenging effect on superoxide anion radical,and the scavenging effect of the proteins didn't reach 50% at the concentration of 77.7 μg/mL.The proteins showed a strong reducing power,but had no metal chelating activity.The radical scavenging activity was stable at a high temperature.The results showed that the hudrosulfide contained in CP wasn't the mainly factor on the antioxidant activity.
