Abstract
The cottonseed protein was extracted from cottonseed meal by two-step method of alkaline extraction and enzymatic hydrolysis.The extraction rate of protein was used as an index,and the optimum conditions of alkaline extraction were determined by orthogonal test as follows:pH 10.5,60℃,90 min,ratio of material to liquid 1∶18.The remain dregs produced by alkaline extraction were hydrolyzed by protease to extract protein.The optimum conditions of enzymatic hydrolysis were:60℃,pH 10.5,enzyme dosage 240 U/g,90 min,ratio of material to liquid 1∶10.The ratio of extraction was 88.77% by the process of two-step extraction.Moreover,the research on the functional properties of the protein showed that its function was commonly.
