Abstract
Rice flour was processed by two-step method of alkaline extraction and enzymatic hydrolysis for higher extraction rice protein.The impact factors on the extraction ratio of rice protein were studied,including pH,temperature,the ratio of water to flour and time.The results indicated that the better processing condition was: pH11.0,50℃,the ratio of water to flour is 1∶8,120min.The remain dregs were hydrolyses for the second time by alkali hydrolytic enzyme of protein.The optimum condition of extraction of rice protein was :50℃,pH8,E/S 1%,1∶8,1h.The ratio of extraction was 90.49% by the process of two steps extraction.
