Abstract
Cottonseed protein was prepared from degossypoled and defatted cottonseed meal by the follow process:cellulase was used to destruct the cell wall,and then the alkaline protease was used to hydrolyse cottonseed protein.Single factor experiments and orthogonal test were used to optimize the extraction process parameters.The results showed that the optimum conditions of cellulase hydrolysis were as follows: pH 5.0,temperature 50℃,enzyme dosage 0.4%,reaction time 2.0 h.The optimum conditions of alkaline protease hydrolysis were as follows: pH 8.5,temperature 55℃,enzyme dosage 4.0%,reaction time 3.0 h.Under the optimum conditions,the extraction rate of protein was 86.4%.
