Abstract

The optimal extracting conditions of yellow pigment of safflower(origin in Hetao region) were analyzed. The results obtained showed that the optimal conditions were pH 7.0 and 80℃of top water,1:30 ratio of the flower to water. The extracting rate reached 25.50%stably.The physicochemical properties of yellow pigment are stable by this easy method. This experiment may apply conditions to industrial production, and be helpful for developing yellow pigment.
