Abstract
The optimum conditions were obtained for efficient extraction of thesafflower yellow pigment and their physical and chemical properties were analyzed.The results obtained showed that the temperature of 70℃,an extracting time of 1.2 hours,1∶50 ratio of the flower to reagent and extraction at pH 3.0 of reagent solution were the optimal conditions for the extraction of the pigments.The extracting rate reached 93.4%,and extracting twice would be enough.The stability was significantly affected by Vitamin C,but insignificantly affected by heat,metal ion and potassium sorbate.The pigment color varied from light yellow,yellowish-green to orange as the pH was changed.Light intensity also had insignificant effect on the pigment properties.
