Study on the Stability of Yellow Pigment in Dry Safflower

Abstract

The safflower yellow pigment is a kind of natural nutritional type edible pigment extracted from dry safflower,and has medicinal effect.It is used to cure many kinds of illness,for example,high-blood-press.The stability of yellow pigment is well,it well be still stable in 30d.If it be put in room,it is stable to heat,the pH range 3-7,oxidizing and reducing agent and metal(except for Fe Zn) have no undesirable effect on its stability and color the studying on the stability of yellow pigment can be helpful for development of the yellow pigment and apply optimal conditions to industrial production.
