Abstract
The extraction process of extracellular polysaccharide in the Tricholoma matsutake broth was studied,and the effects of final ethanol concentration,pH,and alcohol precipitation time on the extraction of extracellular polysaccharide in Tricholoma Matsutake were also studied.Based on the single-factor tests,orthogonal tests were performed,and results showed that the best conditions of extracellular polysaccharide extraction were that final ethanol concentration 60%,pH 8,and alcohol precipitation time 9h respectively.Under these conditions,the production of extracellular polysaccharides was 0.412g / L.
