Abstract
The pigments in Myrsine africana L.fruit are extracted by solvent extraction method and analyzed of their physicochemical properties.The best extraction conditions are as follows: 99.5% of ethanol is as extraction solvent,extracting for 1 h at 60 ℃.The pigments are stable in light and strong acidic environment and cloudy in slight acidic and nearly neutral environment.Their tolerance to NaSO3,Vc,EDTA and citric acid is poor.Sodium benzoate and KMnO4 have hyperchromic effects on them and some metal ions such as Ca2+,Mn2+,Zn2+,K+,Na+,Fe2+,Mg2+,Cu2+,Sn2+,Co2+,Al3+,Pb2+ have color protection effects.Moreover,Fe3+ affects the stability of pigments.
