Abstract
Taking the ethnic medicine acanthopanan trifoliatus as materials,their extractions of the red pigment and physicochemical properties were analyzed. The best extraction conditions were found as follows: 40% ethanol( V/V) as extraction solvent for 1 h extraction at 60 ℃. The pigments were stable in natural light,dark red under acidic conditions and brownish green in neutral and slightly alkaline environments. KMnO 4,Vc,citric acid, NaSO3,sodium benzoate and EDTA had a considerable effect on colour increasing of the pigment from acanthopanan trifoliatus fruits. Some metal ions such as Ca2+、Mn2+、Zn2+、K+、Na+、Fe2+、Mg2+、Cu2+、Co2+、Al3+、 Pb2+ had hypochromic effect. Moreover,Sn2+and Fe3+ affected the stability of the pigments.
