Abstract
Using the fruits of Syzygium brachythyrsum Merr. et Perry as material, the extracting process of the pigments was studied by single factor experiments and the stabilization of pigments was analyzed. The best extraction conditions were found as follows: 80% ethanol as extraction solvent for 90 min extraction at 60 ℃. The pigments were deep red in the strongly acidic environments(pH ≤3),and were light pink(pH 5 ~6),greenish blue(pH ≥7) and green in the strongly alkalinity environments(pH 11). The absorbance and the color of the pigments were stable under the natural light after 72 hours. The oxidant, reducing agent, food additives and glucose had no obvious effect on the pigments. Some metal ions such as Ca2+, Mn2+, Zn2+, K+, Na+, Fe2+, Mg2+, Cu2+, Co2+, Al3+, Pb2+had no significant effect on them. Moreover, Sn2+had hypochromic effect and Fe3+affected the stability of the pigments.
