Abstract
The physicochemical properties of red pigment of strawberry were studied.The result showed that the pigment was sensitive to temperature and light as well as it was more stabilized in acid condition than in basic condition.The biggest absorptance peak of the pigment was at 500nm.The influence of metallic ions such as Na~+、Ca~(2+)、Zn~(2+)、Cu~(2+),C-7H-5O-2Na and ascorbic acid on red pigment of strawberry was not obvious.The glucose and sucrose have obvious enhancement effects on the tone of pigment,meanwhile,hydrogen peroxide and Na-2SO-3 have severe undesirable effect.
