Abstract
The extraction of red pigment from strawberry and its stability were studied.The results show that the red pigment is resistant to heat,light,reductant,oxidizer and keep stable in the presence of Na +?Ca 2+ ?Mg 2+ and Cu 2+ ions its stability is good in the pH range of 2～8.
