Abstract

Effect of different factors on the extraction of lycopene was studied. The optimum condition was obtained. When extractive temperature was 40℃,extractive time was 5 hours, the ratio of tomato to liquid was 1∶1(g∶mL),using chloroform as extraction solvent could extract lycopene from tomato effectively.
