Abstract

The extraction of lycopene from tomato was studied using solvent extraction method.According to single-factor experiments and orthogonal test,the optimal extraction conditions is: extraction solvent ethyl acetate,the solid-liquid ratio of 1∶ 4,extraction temperature 50℃,extraction time of 50mins and extracting times of 3.Under these conditions,the productivity of lycopene was 3.46mg/100gFW.A preliminary study of the antioxidant activity of lycopene was done and the result indicates that lycopene could effectively slow down the lipid oxidation and rancidity to extend the cooking oil shelf.
