Abstract
The forward extraction of maize germ oil and protein by reverse micelles was studied.The effects on protein and oil extraction efficiency of extraction time,W0(concentration ratio of water to surfactant),extraction temperature,concentration of KCl,pH and material dosage were investigated.The results showed that the optimum conditions were as follows:extraction time 1.0 h,temperature 40℃,pH 7,W025,KCl concentration 0.1 mol/L and material dosage 0.50 g.Under the optimum conditions,the extraction efficiency was 85.49% of oil and 45.61% of protein.
