Abstract
Using extraction rate as target the extraction of the acid soluble tilapia scale collagen was optimized by response surface method on four factors including ratio of liquid to solid, acetic acid concentration, time and temperature. The results showed that the acetic acid concentration, time and temperature had significant influence on the extraction rate. The best extraction rate was 9.88% when it is at 63 ℃ for 6.2 hours with liquid to solid ratio of 30∶1 and acetic acid concentration of 1.2 mol / L.
