Abstract

The liquor's flavor style of Luzhou is one of the three major styles. Currently, Luzhou flavor style liquor occupies seventy percent of the liquor market share. This article gives a general review on the technological development of Luzhou flavor style liquor from the 1960s' identification, depending on the koji making, fermentation and blending, etc. And its contributions to the liquor industry are also described.
