Abstract

Chilling injury frequently happens in the process of storage, packaging and transportation of fruit and vegetable. This paper summarized the relationship between reactive oxygen metabolism and chilling injury, pointed out that H2O2 might be required for the enhancement of chilling endurance, and H2O2 treatment might be a promising technique of postharvest treatment.
