Abstract
Comparison ofcollagen extracted fromchannel catfish skin with acid and enzymatic.The orthogonal test results showthat the optimal processing conditions in enzymatic method are:distilled water as extraction agent,amount of enzyme is 4 000 U/g, temperature is 55℃,time is 6 h,solid-liquid ratio is 1∶5,and the extraction rate is 49.32%;the optimal processing conditions in acid method are:the concentration of acetic acid is 0.5 mol/L,temperature is 30 ℃,time is 96 h,solid-liquid ratio is 1∶60,and the extraction rate is 55.18%.The extraction in acid method rate is higher than that in enzyme method, and the product in acid method is uniform color.
