Abstract
The apple pomace fermented using mutagenic strains-Aspergillus niger ZM-8, Sac.cerevisiae, Candida tropicalis and Geotrichum candidum. There was optimal formula of medium and composite bacterium optimal formula through orthogonal experiment. The experiment optimal formula of medium was as follows: ammonium sulphate 7 g, sugar 4 g, urea 2 g, salt 4 g, the crude protein content of the product 26.4%, increased 312.50%. composite bacterium optimal formula was as follows: Aspergillus niger ZM-8 0.5 g, Sac. cerevisiae 1.5 g, Geotrichum candidum 1.0 g, Candida tropicalis 1.5 g, the crude protein content of the product reached 27.9%, increased 335.94%.
