Abstract

The influence of enzymatic hydrolysis conditions(temperature,pH,enzyme addition and substrate concentrations) was studied.The results showed that the optimal enzymatic hydrolysis temperature was 50-60 ℃ at pH value of 5.0-6.0 buffer system of tobacco aqueous solution.The protein content in tobacco was gradually decreased with the increase of enzymatic hydrolysis time and enzyme concentration,while the concentration of soluble nitrogen and total free amino acids in enzymatic hydrolysate gradually increased.
