Abstract
The hydrolysis process of corn germ protein with trypsin was studied.The effects of main parameters including enzyme-substrate ratio,hydrolysis temperature,pH,substrate concentration on hydrolysis degree were investigated.The results showed that the optimal hydrolysis conditions were as follows:2.0% of enzyme-substrate ratio,temperature(40℃),pH8.0,substrate concentration 8%,hydrolysis degree of corn germ protein was 10.4% after hydrolyzing 4 h at the optimal hydrolysis conditions.The molecular weight distribution of hydrolysate was also determined using HPSEC,it indicated that the molecular weight of hydrolysates mainly range from 200 to 4 000 Da.
