Abstract
Enzymatic hydrolysis of fly larval protein by trypsin under neutrality condition was systematically studied.The effects of operating parameters including enzyme activity,substrate concentration,treatment time,pH and the temperature on the degree and the speed of protein hydrolysis were measured by formaldehyde fixation method.Based on these,the optimum hydrolysis conditions were discussed.The distribution of polypeptide molecular weight of hydrolysis protein was analyzed by high performance liquid chromatography(HPLC).The results showed that the majority of polypeptide molecular weight were less than 15 000 D.
