Abstract
The protein in corn germ was hydrolyzised by the alkaline protease 2709.The influencing factors were temperature,pH,protease dosage,substrate concentration and hydrolysis time.The evaluating value was extraction rate of protein in corn germ.The results showed that the extraction rate of protein was up to about 85% when hydrolysis time 4h,temperature 40℃,pH 9.0,protease dosage 900U/g and substrate concentration 4.0%.
