Abstract
Fifty lactic acid bacterium were isolated from traditional fermented subjects,and five ones which exhibited strong inhibitory activity against the indication bacteria were found through double agar diffusion test.After eliminating the function of lactic acid and catalase,one strain still had a little inhibitory activity,but the inhibition activity was lost after treatment of trypsin.Therefore,the inhibition substance could be classed as bacteriocin.
