Abstract

[Objective]To develop a strain of high-efficient bacteriocin with broader antimicrobial spectrum as natural preservative.[Method]With pickles and yoghurt as raw materials,the bacteria,which could inhibit the indicator bacteria,was screened from the test materials by using MRS selective medium,and whether the bacteria could produce bacteriocin or not was determined by the tests of excluding acid inhibition,hydrogen peroxide inhibition and protease sensitivity.[Result]The screened strain was identified to be lactic acid bacteria,the produced bacteriocin had inhibitive effect against gram-negative and gram-positive bacteria,and it was a strain of lactic acid bacteria with broad spectrum and the ability of bacteriocin-producing.[Conclusion]The bacteriocin-producing lactic acid bacteria had important roles in inhibiting various pathogens and food decay.
