Abstract

A strain,SD-22,produced inhibitory activity substance,was screened in 329 lactic acid bacteria isolated from pickles and identified as Lactobacillus brevis.The supernatant of SD-22 stain eliminated the organic acids and hydrogen peroxide exhibited strong inhibitory activitr against the gram-positive bacteria,including Staphyloccocus aureus,Bacillus subtilis,Bacillus cereus.A strong activity was also observed against the gram-negative bacteria such as Escherichia coli,Salmonella typhimuniuns.The inhibitory activity deceased slightly after treatment with trypsin,pepsin and proteinase K.Therefore,this strain produced a bacteriocin of wide inhibition spectrum.
