Abstract

This article mainly dealed with the extraction of lycopene, and the affecting factors, such as pretreatment methods about raw material, extraction temperature, time, pH, solvent and solvent ratio on extraction.The results showed that pretreatment of tomato pulp with 0.5% antioxidant ( BHT ) and dehydration agent ( isopropanol ), and then extract of lycopene with 1∶3 ratio of raw material to petroleum ether-acetome for 4 hours under pH=6, T=30℃ could obtain the best result.
