Abstract

Fusel oil content is high in liquor and has a poisoning effect on the human body.In this paper,effect of different addition of Daqu on fusel oils content were studied and the results showed that effects of different addition volume of Daqu on n-butanol,isobutanol,isoamyl alcohol and total fusel oil were different;when ration of materiel and liquid reach to 1:1 and 1:1.3,the formation of fusel oil had tended to moderate the volume;add Daqu to control the amount of fusel oil to generate feasible.
