Abstract
The main kind of china's liquor is xiaoqu liquor,its production occupied about 35% of the total production.However,the fusel oil in xiaoqu liquor is generally higher than the daqu liquor,it makes people dizzy when drinking,so reducing the content of fusel oil in xiaoqu liquor causes more and more manufacturer's attention.According to the research in recent years,variety of methods to reduce the content of fusel oil in xiaoqu liquor were summarized and analyzed.
