Abstract

Soybean isoflavone glycoside was extracted from soybean by alkaline hydrolysis after acid hydrolysis.Optimization of the extraction processes was achieved by single-factor experiment and L9(33)orthogonal experiment.The results indicated that alkaline hydrolysis temperature had the greatest influence on the extracting rate,followed in order by alkaline hydrolysis time and pH and that alkaline hydrolysis temperature 50 ℃+ alkaline hydrolysis time 1 h + pH 9.0 were the optimal conditions of extracting the soybean isoflavone glycoside,under which the extracting rate was up to 73.51%.
