Abstract

Objective: To study the properties of immobilized papain.Methods: Papain was immobilized on nano-silica using glutaraldehyde as the cross-linker.The optimum immobilization conditions of papain on the nano-silica,enzyme properties and kinetics parameters were studied.Results: The optimum temperature and pH of immobilized enzyme was 75℃ and 8.0,respectively,and the enzyme activity could reach up to 61.5 %.Conclusion: Immobilization has no obvious influence on enzyme activity compare with dissociate papain.
