Abstract

Papain was immobilized on 0.5%(v/v)glutaraldehyde cross-linked nylon membrane by soaking method.The optimum immobilized conditions and the characteristics of free and immobilized papain were determined.The results showed that in pH 6.0,the carrier was soaked in 2 mg/mL papain solution at 4 ℃ for 5 h,the activity of immobilized papain 303.4U/g.The pH and temperature of optimum reaction of immobilized papain were 6.0-7.0 and 65 ℃.The pH and thermal stabilities of immobilized papain were higher than those of free papain.
