Study on the antioxidant activity of the extracts from citrus peel

Abstract
Extracts from citrus peel were extracted by the method of microwave technique, the extracts antioxidant of scavenging free radical, such as hydroxyl radical, superoxide anions and hydrogen peroxide, were investigated .Results showed the extracts had great function of scavenging free radical. The scavenging rates of hydroxyl radical and superoxide anions were 100% and 98% respectively when 0.5 mL extracts added in antioxidant reaction system, the rate of scavenging hydrogen peroxide of 0.7 mL extracts diluted 100 times was 25%. The extracts from citrus peel showed similar antioxidant function as vitamin Cin in the lard storage experiments.
