Abstract

Soy isoflavone aglycone was extracted from soybean with the method of alkali hydrolysis first and then acid hydrolysis.By means of single factor and orthogonal test,the optimum conditions for alkali hydrolysis was determined as follows: pH 8.75,50℃,time 90 min.Under the optimum conditions,isoflavone aglycone was obtained with a purity of crude samples 19.9% and extraction rates of crude samples 44.3%.
