Abstract
The high purification soy isoflavone aglycone was extracted from low purification soy isoflavone product by acid hydrolysis,ultrasound-assisted acid hydrolysis and enzyme hydrolysis.In this study,in order to choose a better method to prepare high-purity soybean isoflavone,the hydrolysis rates,the isoflavone returns-ratio and the product purity of the three hydrolysis methods are com-pared,and the composition of the product is analyzed.The results showed that it’s easy and safe to sep-arate and purify soybean isoflavone by β-glucosidase hydrolysis method,and the product obtains rate is 15.1%,the isoflavone returns-ratio is 77.16%,the product purity is 92.78%.
