Abstract

In this paper,antioxidant activity of flavonoids from the leaves of quercus dentata was studied on five aspects:DPPH free radical scavenging ability,the total reducing power,hydroxyl radical scavenging ability,anti-linoleic acid oxidation capacity and superoxide anion scavenging ability.At the same time antioxidant activity was compared with ascorbic acid and BHT.The results showed that:under experimental condition,quercus dentata flavonoids had certain antioxidant activities and it increased with the enhancement of concentration.DPPH free radical scavenging ability and the total reducing power of quercus dentate flavonoids were stronger than VC and BHT,and hydroxyl radical scavenging ability and anti-linoleic acid oxidation capacity were weaker than VC and BHT.Superoxide anion scavenging ability was stronger than VC and BHT at higher concentration.
