Analysis Components of 4 Kinds of Fresh Boletus sp.

Abstract

Analysis the contents of crude protein,crude fat,mine elements et al.in Boletus speciosus Frost,Boletus Calopus Fr,Boletus edulis Bull Fr.,Boletus tomentipes1 by atomic absorption method,colorimetry.The results showed the contents of crude protein,crude fat,total sugar and crude fiber 4.38%~5.42%,2.47%~3.07%,1.26%~3.85%,1.23%~1.56% in the 4 kinds of fresh Boletus sp.respectively.The contents of iron,zinc,calcium were 19.62~37.96mg/kg,6.53~9.67mg/kg,146.23 ~298.02 mg/kg respectively.The contents of total Arsenic could not be tested.The contents of total mercury,lead,cadmium were 0.06~0.73mg/kg,0.45~0.62 mg/kg,0.075~0.105 mg/kg,respectively.The conclusion was that the 4 kinds of fresh Boletus sp contained rich nutritious components,but the contents of total mercury in Boletus speciosus Frost,Boletus Calopus Fr were quite high,this should be concerned.
