Abstract
Using water to extract polysaccharides from jujude,the effects of different factors on the extraction rate of polysaccharides and the optimum extraction conditions were studied.The main conclusions were obtained as follows: adding 12 times water as much as jujube at 95 ℃ for 3.5 hours and extracting 2 times.Under the condition,the extraction rate of polysaccharides could reach to 2.53%.After using alcohol to precipitate and remove the proteins in the concentrated solution,the polysaccharides content in the coarse polysaccharides could reach to 93.66%.
