Abstract
Enzymatic modification of stevioside with rebaudioside A by β-fructofuranosidase was performed in this paper.The optimal reaction conditions were found as follows:pH6.5,temperature 40 ℃,mole ratio of stevioside to rebaudioside 0.007,mole ratio of stevioside to sucrose 0.003,and enzyme dosage 15 U /mL.under those conditions,the maximal conversion of stevioside and rebaudioside A was 63.6% and 63%,respectively.
