Abstract

[Objective] To analyze the compositions of coix seed,so as to provide reference for the development of coix seed.[Method] The contents of each component were determined with conventional methods.[Result] The contents of water,ash,fat,fiber and protein in coix seed were determined to be 10.73%,1.64%,5.56%,0.44% and 14.26% respectively,and the content of zinc,ferrum,calcium,magnesium and copper were 43.24,212.90,749.00,1 193.60 abd 11.70 μg/g respectively.[Conclusion] Coix seed is rich in abundant nutrient,and this study will provide theoretical evidence for the further development of coix seed.
