Abstract
In this paper, coix seed and Chinese wolfberry were used to produce pure taste health beverage. With the help of the orthogonal test, the best formula was that sugar was 5%, citric acid was 0.2%, coix seed∶Chinese wolfberry was 3∶1. The properties of beverage were tested. The results showed that the soluble solid was 5.76%, pH was 5.42, reducing sugar was 17.9 mg·L-1. The contents of metal elements of Zn, Mg, Na, Fe, Mn, Ca, K were 0.004 5, 4.785 5, 35.102 0, 0.016 9, 0.006 0, 4.742 9, 22.369 0 g·L-1, respectively. There were no metal elements such as Cd, Pb, Cr, Cu and Co. The amino acids were also tested, the results showed that there were 16 kinds of amino acids and the total content was 22.798 μg·L-1.
