Abstract
Objective Nitrice in food was determined by aniline-α-naphthol spectrophotometry based on the principle that aniline and nitrite were diazotized in medium of hydrochloric acid.The results showed the maximum absorption wave length of orange color production was 480 nm,the linear range was 0-0.004 mg/mL,the coefficient related to linear regression equation was r=0.999 9.
