Abstract

The activities of protease, amylase and lipase under different temperatures were analyzed. The results showed that the optimum temperatures for the protease activity in stomach, intestine and hepatopancreas were 40,45 and 45℃ respectively; the descending of the activity of protease at the optimum temperature was stomach hepatopancreas intestine. The optimum temperatures for amylase activity in stomach, intestine and hepatopancreas were 35,40 and 35℃ respectively; the descending of the activity of amylase at the optimum temperature was intestine hepatopancreas stomach. The optimum temperatures for the lipase activity in stomach, intestine and hepatopancreas were 35,30 and 30℃ respectively; the descending of the activity of lipase in the optimum temperature was hepatopancreas intestine stomach.
