Effects of Different Temperature and pH on Digestive Enzyme in Perca fluviatilis

Abstract

By changing temperature and pH,the amylase,protease and lipase of Perca fluviatilis were studied in vitro.The results shown that the optimum temperature of amylase was 30 ℃ for hepatopancreas,intestine and stomach,and their relevantly optimum pH was 5.0,7.0 and 8.0,respectively.The optimum temperature of Lipase from three digest organs was all 40 ℃,and their optimum pH were 4.0,3.0 and 6.0,respectively.The optimum temperature of Protease was 50 ℃ from in hepatopancreas and intestine,40 ℃ in stomach,while their optimum pH was 6.0,8.0 and 2.0,respectively.At each optimum temperature,the order of activity of lipase was intestine,hepatopancreas and stomach.Amylase′s activity order was hepatopancreas,intestine and stomach.Protease′s was intestine,stomach and hepatopancreas.
