Abstract
In this paper, the effects of temperature and pH on the main digestive enzyme activities in intestinal canal and hepatopancreas in Spams macrocephalus were studied. The result showed that the optimum temperature of protease, amylase and lipase activity in Spams macrocephalus were 50℃, 40℃ and 30℃ respectively. The optimum pH values of stomach, intestine and hepatopancreas for protease were 2. 0,7. 0,7. 5 , for amylase were 5. 0,7. 0,7. 0 , and for lipase were 4. 0,7. 5 ,7. 0 respectively. In optimum temperature and pH conditions, the trend of protease activities are stomach intestine hepatopancreas, the trend of amylase activities are hepatopancreas intestine stomach, and the trend of lipase activities are intestine hepatopancreas stomach .
