Abstract
The aim of this paper is to develop a process for hydrolysis Tilapia with protamex protease.The effects of the main parameters including hydrolysis temperature,pH value,hydrolysis time,were investigated with single factor experiment,and dosage of enzyme,protein concentration were investigated with response surface methodology(RSM).The optimized conditions are:concentration of protamex protease of 17 660 U/g protein,protein concentration of 2.50%,hydrolysis temperature of 55 ℃,hydrolysis pH value of 7.5,hydrolysis time of 10 hours.Under these conditions,amino acid nitrogen concentration attains 1.41 mg/mL,hydrolysis degree attains 35.25%,and total volatile basic nitrogen reachs 0.048 mg/mL.
