Abstract
The rice protein was extracted from broken long-grain rice using alkali solution.The effect of concentration of alkali,extraction temperature and time,and ratio of solid to liquid on extraction rate of protein were studied.The results showed that the optimum conditions were as follows: NaOH concentration 0.09 mol/L,extraction temperature 25 ℃,and extraction time 4 h,stock-solvent ratio 1∶6.Under these conditions,the protein yield was 77.41% and the protein content was 80.56%.
